Pregatim ingredientele uscate: punem intr-un bol faina, faina fara gluten sau amidonul, cacaoa, praful de sare, praful de copt, bicarbonatul de sodiu, scortisoara si amectecam cu un tel sa le aeram foarte bine.</div>

Intr-un alt bol spargem ouale, adaugam zaharul si mixam timp de 5-8 minute, pana cand volumul se tripleaza, devine aerat, de culoare pala si curge sub forma de panglica.</div>

Le mixam pana amestecul capata aspect de nisip. Adaugam oul si eventual 1-2 linguri de apa rece (doar daca e necesar) cat sa se formeze o bila de aluat.</div>

Punem aluatul intre doua foi de pergament si il intindem pana ajungem la o grosime de cca 2-3 mm.</div>

Punem aluatul intr-o tava de diametru cca 26 cm, indepartam excesul, de aluat, de pe margini, acoperim cu o hartie de copt, punem boabe de orez/fasole, pentru a coace "in orb" aluatul nostru, timp de 20 minute la 180 grade...apoi indepartam boabele, hartia si mai lasam pana cand aluatul se coace complet.</div>

Pentru a pregati umplutura de ciocolata, punem la incalzit frisca lichida si cand atinge punctul de fierbere luam de pe foc si adaugam o pastaie de vanilie si o stea de anason. Lasam la infuzat cca 30 minute.</div>

Dupa cele 30 minute, aducem din nou la punctul de fierbere frisca si adaugam ciocolata taiata bucatele mici.</div>

Luam de pe foc si omogenizam bine....dupa care adaugam untul.</div>

Omogenizam pana cand ciocolata capata un aspect lucios.</div>

Cu acest amestec umplem coaja de tarta si dam la rece peste noapte..sau pentru cca 4-5 ore.</div>

Punem intr-un bol: galbenusurile, zaharul, omogenizam si adaugam sucul de la portocala (cca 80-100ml). Astfel ca vasul se pune la bain-marie si in timp de 15-20 minute veti observa cum crema se ingroasa. Trebuie amestecat din cand in cand (cu un tel "para"), astfel incat sa nu ne trezim cu omleta in loc de crema.</div>

A rezultat o crema de branza, cam 450 g si in numai 10 minute am obtinut compozitia pentru cheesecake.</span></div>

Am folosit: 500 g branza, 3 oua medii, 80 g zahar pudra, 100 g biscuiti, 30 g miez de nuca, 70 g unt, semintele de la o pastaie de vanilie, scortisoara, coaja de la 1/2 lamaie, 200 ml frisca lichida, 1 lingura amidon.</div>

Am maruntit in robot biscuitii+nucile, am adaugat scortisoara, untul topit, am omogenizat, dupa care am tapetat baza unei tavi de 20 cm, cu acest amestec. Am dat la rece cca 30 minute.</div>

Intr-un bol am pus branza, zaharul, ouale, vanilia, scortisoara, coaja de lamaie, am omogenizat dupa care am turnat frisca lichida si amidonul. Se amesteca bine de tot se toarna amestecul in forma si se pune la copt, la bain marie cum am spus si mai su,s cca 1h si 30 minute la 180 C. Acum depinde de fiecare cuptor in parte si de diminesiunile tavii folosite.</div>

<b>Bain marie</b> = punem tava cu cheesecake intr-o tava mai inalta si turnam apa clocotita pana pe la mijlocul formei.</div>

Se lasa la racit, de preferat, pana a doua zi si se orneaza cu ciocolata (120 ml frisca lichida se aduce la pctul de fierbere dupa care se adauga 1 lingura de miere si 80 g ciocolata neagra. Se lasa 1-2 minute dupa care se omogenizeaza).</div>

Cheesecake-ul se pune pe un gratar si se toarna ciocolata exact pe centrul acestuia. Se va observa ca aceasta tinde spre margini si va acoperi intreg cheesecake-ul.</div>

Pentru inceput am pregatit baza de biscuiti. Am dat prin robot biscuitii + scortisoara si i-am adaugat intr-o oala, unde anterior am topit untul. Am amestecat foarte bine si am pus tot acest amestec in tava (d=20 cm) si am format o baza compacta, apasand cu mana peste amestecul de biscuiti. Am dat la frigider pentru cca 30 minute.</div>

Pentru a pregati compozitia de branza, am pus intr-un bol: branza, mascarponele, ouale, zaharul, amidonul, coaja de lamaie, un praf de sare, amaretto si am omogenizat foarte bine.</div>

Toata aceasta compozitie se pune peste baza de biscuiti si se da la cuptor (preincalzit), 180C, timp de cca 40-45 minute. Cand este gata il lasam la racit in cuptor, dar cu usa cuptorului usor deschisa (cca 30 minute), dupa care inchidem usa cuptorului si lasam acolo cheesecake-ul pana la racirea completa.</div>

Pentru a pregati sosul de capsune nimic nu e mai simplu decat sa spalam foarte bine capsunele, sa le taiam si sa le blendam pana obtinem un sos fin. Adaugam miere si zeama de lamaie.</div>

Pentru a pregati aluatul, luam un bol punem untul (sa fie la temperatura camerei), zaharul si omogenizam timp de 2-3 minute. Se adauga oul, omogenizam, dupa care adaugam ciocolata topita in prealabil la bain-marie.</div>

Faina+praf de copt+cacao+1 praf de sare (daca untul e nesarat) se adauga la amestecul de baza.</div>

Laptele <b>foarte usor</b> incalzit se adauga la aluatul format.</div>

Pentru a face aluatul untul trebuie sa fie <b>foarte rece, </b>astfel ca am pus inr-un bol ingredientele uscate (faina+zahar+amidon) am adaugat untul taiat cubulete si am inceput sa formez un asa zis aluat care trebuie sa semene cu un pesmet. Dupa acest procedeu am adaugat oul batut si am format o bila de aluat. Foarte important e sa nu framantati MULT acest aluat. Trebuie sa fie omogenizat si atat.</div>

Aluatul format il invelim intr-o folie si il punem la frigider pentru 30 minute (minim).</div>

Incepem prin a pregati visinele. Punem intr-o oala fructele fara samburi (eu am avut congelate), adaugam vinul de porto, zaharul si apa in care am dizolvat amidonul (2 lingurite).</div>

Punem pe foc pana observam ca visinele incep sa fiarba. Lasam cca 5-10 minute pana amestecul capata consistenta (sa nu fie un sirop prea subtire), adaugam pastaia de vanilie (fara seminte) , inchidem focul si acoperim). Astfel pastaia va infuza visinele si siropul rezultat. Lasam la racit.</div>

Pentru baza de biscuite a cheesecake-ului, punem biscuitii intr-un robot, ii macinam, apoi ii omogenizam cu untul topit,scortisoara si fulgii de migdale. Omogenizam bine si cu acest amestec tapetam fundul formelor si a unei tavi.</div>

Cand vine vorba de cupcakes parca imi zambeste inima...de ce?! poate va intrebati!?...pentru ca acest dulce, dupa parerea mea, e foarte complex <strike>(deci nu complet).</strike> </div>

Are tot ce-i trebuie: blat, frosting (in orice combinatie dorim), fructe, bombonele, pasta de zahar, figurine din wafe...orice.</div>

Un alt motiv ar fi timpul redus de pregatire. La inceput poate fi un pic ciudat...cand ne uitam la ceas si observam ca am petrecut mai mult de 2 ore pana am facut o duzina de cupcakes.</div>

Dar dupa ce deprindem miscarile, totul merge rapid si constantam ca e un mod foarte placut de a pregati ceva dulce, gustos, si foarte prezentabil pentru cei dragi.</div>

Eu sunt abia la inceput...nu am o pregatire de niciun fel, de fapt toata pregatirea mea profesionala nu are legatura nici macar cu bucatarie.</div>

Recomand celor care nu au incercat, sa nu ezite si sa cumpere ori sa pregateasca, chiar ei, aceste minunate "prajituri in cana" (dupa cum bine stim ca s-ar traduce pe limba noastra).</div>

O sa spuneti..."pai in loc de visine punem mure...nimic interesant"..nu e chiar asa...pentru ca visinele, dupa cum stiti, sunt acre, tenta lor e racoritoare, in schimb mura nu e la fel de acra...si in combinatie cu ciocolata, fiecrare din cele doua, au un gust diferit.<br />

Bine...cam atat cu vorbarie...si ne "vedem" la urmatoarea postare de pe blog.<br />

Pentru inceput preincalzim cuptorul la 180 C si punem hartii intr-o tava de briose.</div>

Ciocolata+unt le punem la bain-marie pana se topesc si lasam la racit.</div>

Ouale le spargem intr-un bol, le mixam putin si adaugam zaharul. Timp de 5 minute mixam pana amestecul creste in volum si se deschide usor la culoare.</div>

Adaugam in mixul de oua ciocolata+untul, omogenizam cu o spatula dupa care adaugam vinul de porto.</div>

La final punem in transe ingredientele uscate (cacao+faina+praf de copt+bicarbonat+scortisoara) cernute.</div>

Asezam compozitia in formele de briose si dam la cuptor pentru cca 10-12 minute.</div>

Din dorinta de a reusi cele mai bune cupcake-uri am abordat din nou o reteta cu un rezultat, cel putin vizual, foarte bun. Dar pot spune ca si consumatorii au apreciat, chiar s-a punctat cuvantul "flavor" (aroma).</div>

Pentru <b>decor</b> am taiat fasii subtiri de coaja de portocala si am presarat scortisoara.<br />

Spargem ouale si le punem intr-un bol rezistent la caldura, impreuna cu zaharul si omogenizam bine. Adaugam coaja de portocala, sucul si jumatate din unt. Amestecam si punem la bain-marie. In tot acest timp amestecam fara oprire(cca 20 minute), pana compozitia capata luciu si se ingroasa usor.</div>

Cand este gata dam deoparte si adaugam restul de unt.</div>

Punem peste suprafata cremei o folie (pentru a evita formarea unei pojghite) lasam la racit dupa care punem la frigider.</div>

Eu am pregatit caramelul cu ceva timp in urma. De preferat este sa-l pregatiti si dvs macar cu o zi inainte pentru a avea timp sa se raceasca.</div>

Astel ca, pentru <b>pregatirea caramelului</b>, punem intr-o oala cu fund dublu, zaharul, lasam la caramelizat pana capata culoarea usor maronie, imediat adaugam untul, luam de pe foc si amestecam energic cu un tel para ori lingura de lemn.</div>

Turnam smantana, usor incalzita (30-40 grade), in fir subtire si amestecam fara oprire.</div>
<div style="text-align: center;">
Punem, din nou, pe foc pana cand ajungem la consistenta dorita (5-10 min). Sa tineti cont de faptul ca, dupa procesul de fierbere caramelul oricum se mai ingroasa.</div>

Cantarim toate ingredientele (pentru o mai buna organizare).</div>

Separam ouale. Albusurile cu un praf de sare le batem spuma, dupa care adaugam zahar pana obtinem o bezea ferma.</div>

Galbenusurile+vinul de porto le omogenizam si le adaugam peste bezea. Incorporam si untul topit, dupa care cernem faina+cacao+praf de copt si le adaugam in transe, amestecand usor (cu o spatula) pentru a nu scoate aerul din compozitie.</div>

Punem intr-o tava de briose, hartii, dupa care turnam compozitie la baza, adaugam caramel, dupa care acoperim cu compozitie pana la ocuparea a 3/4 din forma briosei.</div>

<li>1 lingura apa de trandafiri</li>
<li>100 grame ciocolata amaruie (74%) - optional</li>

<b>Cum procedam?</b></h3>
<div style="text-align: center;">
Intr-un bol punem stafidele, amaretto si apa de trandafiri. Lasam pt cca 10 minute.</div>
<div style="text-align: center;">
In recipientul unui robot punem nuca si prunele uscate. Prin pulsatii macinam aceste doua ingrediente pana se omogenizeaza.</div>
<div style="text-align: center;">
Adaugam stafidele impreuna cu lichidul in care au stat, feliile de ananas, ghimbirul, caisele, mierea si vanilia.</div>
<div style="text-align: center;">
Mixam totul pana observam ca amestecul este omogen.</div>
<div style="text-align: center;">
Verificam compozitia, nu trebuie sa fie foarte moale, dar nici tare ca un prietroi. In caz ca mai trebuie putin lichid adaugam apa.</div>

Din aceasta compozitie formam bile de diametru cca 3 cm si le tavalim prin ciocolata topita la bain-marie, biscuiti amaretti zdrobiti ori nuca de cocos.</div>

Bomboanele se pot pastra la frigider pana la 3-4 saptamani.</div>

Gustul e cu siguranta unul care rasfata papilele gustative si cel mai mult ma incanta faptul ca tot ce am folosit e sanatos si fara continut de zahar.</div>

Pentru blat incepem prin a separa ouale.</div>

Albusurile le batem spuma cu un praf de sare si adaugam zaharul (treptat) pentru a forma o bezea.</div>

La bezeaua formata adaugam galbenusurile si uleiul.</div>

Cernem faina, cacaoa si praful de copt si le adaugam peste bezea. Amestecam usor cu miscari circulare dar in asa fel incat sa nu scoatem aerul din bezea.</div>

Cantarim toate ingredientele pentru a le avea la indemana.</div>
<div style="text-align: center;">
Cuptorul il setam pentru o temperatura de 180C. Pregatim doua tavi pentru cupcake.</div>

Punem intr-un bol: cacao, zahar brun inchis si apa recent fiarta (deci trebuie sa fie clocotita). Omogenizam foarte bine si punem deoparte pana pregatim restul mixului.</div>

Intr-un alt bol punem untul, zaharul si omogenizam, pana se incorporeaza bine si formeaza un amestec cremos. Adaugam semintele de la o pastaie de vanilie.</div>

Adaugam, peste mixul de unt, in transe: 1/2 din ingredientele uscate (faina, praf de copt, bicarbonat, sare), 1 ou, cealalta jumatate de ingredientele uscate, al 2-lea ou si la final lichidul cu cacao.</div>

Amestecul va fi usor lichid dar nu e nicio problema.</div>
<div style="text-align: center;">
Portionam in forme aluatul (vor fi cca 18-20 cupcake) si dam la cuptor pentru cca 15-17 minute.</div>

Facem testul cu scobitoarea pentru a fi siguri ca sunt coapte.</div>

Pentru frosting omogenizam: branza mascarpone, mierea, zaharul pudra, semintele de la 1/2 pastaie de vanilie si amaretto.</div>

Cu ajutorul unui pos decoram cupcake-urile, punem un varf o mandra cireasa si radem ciocolata.</div>
